Choose your cut:

• Small Outside Skirt (~7 oz) — The classic skirt steak. Thin, intensely flavorful, and quick to cook. Perfect for fajitas, carne asada, and stir fry. Sear hot and fast, slice against the grain.
• Large Outside Skirt (~14 oz) — A bigger portion of the same prized outside skirt. More surface area means more crust, more flavor. Great for feeding two or meal prepping for the week.
• Inside Skirt (~11 oz) — Wider and slightly thicker than the outside skirt with a deeper, more robust beef flavor. Excellent for carne asada, tacos, and marinades. Slice thin against the grain for maximum tenderness.

Pro tip: Marinate for 30–60 minutes, grill over high heat, and always slice against the grain.
